The term “Natural Olives” also known as “Greek Style Olives” refers to the method of processing. After their harvest, green or black olives are debittered and fermented with natural processes without the use of alkaline solutions. All natural olives are processed in brine or in dry salt. This process can last up to eight months and during this period olives develop their unique taste characteristics due to their enzymes and salt. The result of this natural process is the preservation of beneficial compounds such as antioxidants, and hence the nutritional value of olives
